happy thanksgiving to you all (or at least to the ones who celebrate it)!!
Even if you’re not celebrating it officially, why not trying this amazing recipe for a perfect turkey?! I’ll bet you won’t regret it!
So ready, steady, go and buy all the ingredients!
You will need:
– a whole turkey (neck and giblet removed)
– 2 cups kosher salt
– 1/2 cup butter, melted
– 2 large onions, peeled and chopped
– 4 carrots, peeled and chopped
– 4 stalks celery, chopped
– some sprigs fresh thyme
– some bay leaves
– 1 cup dry white wine
Rub the whole turkey (in and out) with the kosher salt. Place it in a large stock pot, and cover with cold water. Then put it in the refrigerator. This will allow the turkey to soak in the salt and water mixture, therefore you need 12 hours, or even better leave it overnight.
Preheat oven to 175-180 C. Then proceed this way: thoroughly rinse the whole turkey and brush it with 1/2 the melted butter. Once you’ve finished, place it breast side down on a roasting rack in a shallow roasting pan. Stuff the cavity with 1 onion, 1/2 the carrots, 1/2 the celery, some sprig of thyme, and some bay leaves. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the wine.
Roast uncovered for at least 4 hours in the preheated oven. Once the owen is at 180 C, turn the turkey breast side up about 2/3 through the roasting time, and brush it using the remaining butter.
Before carving, allow the turkey to stand for at least 30 minutes.
